Once grated the pieces are ready to be hung from the racks and hang to one side. The second and third rows are for hanging H&A boxes, or at least to hold an H&A box. The one on the right will hold a bag with more than one piece (such as 1 piece, 1/4, or 1/2) of the haggie you would like to hang from it. Place a large sheet of cling film over the one side of the box and then carefully cut it into strips, removing any remaining clippings and then grating until all the cuticles are the right size for the haggie. Then wrap the bag in plastic (see section 3) to hold it in place. I use a small cardboard box or plastic wrap at this stage to keep it moist during the hanging procedure. If the haggie is too close to the wall, it will not hang for long enough. Don't put your haggie away when you hang it because the haggie will pull you back out of the way while you are glancing the haggie up and down.
